In general the molecular weight of water is 81.

We can say that in other words, The value of K (relative permittivity) of water is 81.

So as we know that, fish live in water.

So that, water is the important component of fish tissue skin.

So it means that, the fish is made up of dielectric material, so that it can store electric charge.

So as we know that, fish made up dielectric material, simply it's means that, water has two molecule, one is Hydrogen and Oxygen.

So that, Hydrogen contain (Positive charge) and Oxygen contain (Negative charge). Because of that, we called dielectric material.

The capacitor has two plates, so that one plates contain positive charge and another plates contain negative charge.

So these plates separated from each other by dielectric material.

So if we put or place the fish in between these two plates of capacitor.

Than, the fish tissue change the capacitance of capacitor.

So that, if the fish is fresh than it's body will be strong and having the higher value of K (relative permittivity) 81.

It means that, the value of relative permittivity or molecular weight of  higher than 81.

And if fish is older than it's body will be weak and having the lower value of K (relative permittivity) 81.

So it means here, the value of relative permittivity or molecular weight is lower than 81.
